2. Cook couscous(10 oz) according to package directions.
3. In a large baking dish, combine sliced zucchini(1/2), drained and rinsed artichoke hearts(13.7 oz), stewed tomatoes(14.5 oz), sliced bell pepper(1), sliced shallot(1), minced garlic(2 cloves), halved olives(1/2 cup), capers(1/4 cup), Italian seasoning(2 tsp) and salt(1/2 tsp).
4. Roast in oven for 15 minutes or until vegetables are fork tender.
5. Lower oven temperature to 415°F, place fresh tilapia portions(4) on top of vegetables. Roast for an additional 10 minutes or until fish is fully cooked and easily flakes.
